Coconut chicken tenders with apricot dipping sauce

Chicken Tenders

Chicken wings are a tailgating classic. But while delicious, they can wreak havoc on your body due to the high amounts of sodium and fat found in most recipes.

Totally rethink this staple by not only toning down the toll it takes on your fitness, but boosting its flavor, as well. Throw in a zingy apricot dipping sauce and coat the tenders in coconut for a delicious, heart-healthy chicken tender alternative.

Ingredients 
1 lb chicken breast
2 eggs
1 cup breadcrumbs
1 cup shredded coconut
1 cup apricot jam
2 Tbsp Dijon mustard
Salt and pepper, to taste
How to make it 

Cut the raw chicken into slices (between 6-8, depending on the size) and dip the pieces into a beaten egg.

Coat with a combination of equal parts breadcrumbs and shredded coconut.

Place the chicken on a baking sheet coated with nonstick cooking spray, and bake at 400˚ F for 10-12 minutes or until golden brown.

For the sauce, mix 1 cup apricot jam and 2 Tbsp Dijon mustard.

Season with salt and pepper.
