Ingredients
4 medium-sized sweet potatoes
1 cup low-fat sour cream
3 Tbsp olive oil
Salt, to taste
How to make it
Peel the 4 medium sweet potatoes.
Cut lengthwise into chunks about ½-inch thick .
Place on a nonstick baking sheet and lightly coat with olive oil.
Bake at 400˚ F for 15-20 minutes, or until tender.
Season with salt, if desired, and top with low-fat sour cream.
